Jesús Simal Gándara is a Full Professor in nutrition and food science at the University of Vigo, Spain (born 1966) and acts both as AB-Centre’s Coordinator and EJEAFChe’s Editor-in-Chief. He obtained his M.S. degree in pharmacy with a specialization in nutrition and food science as well as a Ph.D. degree in the same field from the University of Santiago de Compostela, Galicia, Spain in 1989 and 1991, respectively.
