Lee Yan Sheen
Lee Yan Sheen is the full Professor at the Institute of Food Science and Technology, National Taiwan University,(NTU), Taipei, Taiwan and Director of the Center for Food and Biomolecules, NTU. He also serves as President, Association for the Study of Health Foods in Taiwan in 1997. Dr. Sheen completed his Ph.D. degree from the Department of Food Science, National Chung-Hsing University, Taichung, Taiwan. His graduate program included the National scholarship supported by Taiwan government for one year study in the Department of Food Science, Rutgers University, New Jersey, USA (1989-1990). He holds M.S. and B.S. degrees from the Department of Food Science, National Chung-Hsing University, Taiwan. Dr. Sheen’s research includes physiological functions of foods (antioxidation and detoxification systems in liver, cancer prevention, and antidepression using natural ingredients and herbs), analysis of active principles in foods, traditional Chinese dietary therapy, and safety of functional foods. He is much involved in the regulation and policy decision making processes and very active in the food industry and health medicine-related applications in Taiwan. He holds numerous awards and honors and authors and coauthors of more than 25 publications in the past five years.
