Stavros Lalas obtained the B.S. degree in agricultural technology in 1991 and in food technology in 1995, then the Ph.D. degree in food technology in 1998. He is an Associate Professor at the Department of Food Technology of TEI of Larissa, Greece. He has extensive experience in the isolation, separation, and identification of natural product extracts and the determination of their antioxidant activity. He also has experience in the analytical techniques. He participated in 38 research (in 3 as scientific coordinator) and educational programs. He has published 39 articles in international scientific journals (with more than 450 citations), 1 chapter in a book, and more than 30 works in national and international conferences. He is also a member of the committee of 2 Ph.D. theses, a member of the editorial board of 2 scientific journals, and a reviewer in 25 international scientific journals.
