Yapeng Fang is currently holding the post of Readership in chemistry at the Institute for Arts, Science and Technology, Glyndŵr University, UK (formerly known as North East Wales Institute of Higher Education). He is also a specially appointed Chutian Scholar at Hubei University of Technology, Wuhan, China. Dr. Fang graduated from Shanghai Jiao Tong University and obtained a B.Eng. degree in polymer science and engineering in 1999. He subsequently obtained an M.S. degree in polymer physics and chemistry from the same university in 2002 and a Ph.D. degree in food and biopolymer science from the Osaka City University in 2005. He had worked for two years as a Marie-Curie Postdoctoral Research Fellow at Unilever R&D Vlaardingen, The Netherlands, before moving to the current post at the Glyn O. Phillips Hydrocolloids Research Centre. Dr. Fang’s research interest is focused on the interaction and thermodynamics of food and biopolymer multicomponent systems and their utilization in food structural design and function enhancement.
