Jay J. Cao
Jay J. Cao received a Ph.D. degree in nutrition from the University of Florida, Gainesville, Fla, USA. He has worked in academic, clinical, and industry settings and conducted both basic and translational research with multiple animal species and human subjects. Dr. Cao has published more than 30 papers in nutrition and bone biology fields. He has presented his research at many national and international conferences. Currently, he is a Research Nutritionist at the USDA Grand Forks Human Nutrition Research Center where he conducts research focusing on the nutritional and physical regulation of bone metabolism using obese animal models. Dr. Cao also investigates the effects of dietary protein and acid-base balance on calcium absorption, retention, and markers of bone metabolism in human subjects.
