C. S. Johnston
C. S. Johnston is a Professor and the Chair of the Nutrition Program at Arizona State University, Mesa, Ariz, USA. She received her B.S. degree in nutrition from the University of Michigan, Ann Arbor, Mich, USA, and her Ph.D. degree in biological sciences from the University of Texas, Austin, Tex, USA. She teaches both undergraduate and graduate courses and has an active research program. She has published over 80 research articles and book chapters, and she is often quoted in popular magazines reporting nutrition news. She is an expert in vitamin C metabolism, the medicinal use of vinegar, and low-carbohydrate diets for weight loss. She is an elected Member of the 2005–2010 Dietary Supplements-Non-Botanicals, Nutrition, and Electrolytes Expert Committee of the U.S. Pharmacopoeia. She is a Registered Dietitian and a Member of the Board of Directors of the American College of Nutrition. She received the 2000 Outstanding Teaching Award at Arizona State University, the Grace A. Goldsmith Award from the American College of Nutrition (2004) in recognition of her significant achievements in the field of nutrition, and the Mark Bieber Professional Award (2008) sponsored by Unilever Bestfoods for her academic accomplishments.
