Maira Segura‐Campos obtained her M.S. degree in food science and technology (2007), Faculty of Chemical Engineering (UADY) and her Ph.D. degree in agricultural science, Campus of Biological and Agricultural Science (2010) (UADY); she is a Dietitian Biologist Chemist (2004), Faculty of Chemistry, Universidad Autonoma de Yucatan (UADY). Dr. Maira R. Segura‐Campos is Research Professor from Faculty of Chemical Engineering (UADY) in México. She is National Researcher Level I (2012‐2014) of the National System of Researchers. She is responsible and contributor of different research projects and author of national and international articles, books, congress memories, and book chapters as well as director of undergraduate and graduate thesis. She is interested in line generation and application of knowledge principal: generation, development, and characterization of functional foods for specific problems.
