Ferenc Bekes, Ph.D., D.S., is a Retired Honorary Principal Senior Research Fellow at CSIRO Plant Industy, Canberra, Australia, in the Research Program named Gene Technology in Cereal Improvement. Meanwhile, he serves as the Director of the FBFD PTY LTD consulting firm. He is active in food science, especially in cereal science with the special the relationships between the genetics/chemical composition of wheat storage proteins and flour quality. He led the team pioneering in the development of novel small- and microscale dough testing equipments and utilized them as research tools to investigate the effects of individual native and genetically modified flour components on functional properties of dough. His contribution in cereal science was recognised by the Perten Award of ICC in 2000. Another aspect of his work is developing predictive models for dough properties and end-product quality of wheat flour using genetic and biochemical data. Recently, he is involved in characterizing cereal products from the point of view of nutritive and health related issues such as celiac disease and wheat intolerance.
