User Biography : Prof Doris H. D'Souza Dr. Doris D’Souza is currently an Associate Professor in the Department of Food Science and Technology at the University of Tennessee-Knoxville. She received her Ph.D. degree in Food Science and Technology from the University of Georgia, Athens. She has authored or co-authored ~50 peer-reviewed publications, 9 book chapters, and over 90 abstracts. She has been an invited speaker at several national and international meetings, including the Institute for Food Technologists, International Association for Food Protection, Korea Society for Microbiology, and Asia Pacific Symposium on Food Safety, Korea. She is an editorial board member of leading food microbiology journals including Applied and Environmental Microbiology, Food Microbiology, Journal of Food Protection and Food and Analytical methods, as well as an adhoc reviewer for several other journals. Her area of research includes rapid molecular approaches for the detection and tracking of foodborne viruses, understanding their persistence and transmission, and control methods using novel processing technologies, natural plant extracts, and hurdle approaches.
