Irene Dini serves as a an Aggregate Professor in Food Chemistry at Faculty of Pharmacy of Federico II University of Napoli, Specialist in “Food Science.“ She obtained a Ph.D. in natural compounds pharmacologically active. She works at the Dipartmento Chimica delle Sostanze Naturali, University Federico II' of Napoli. The Prof. Irene Dini focuses her research interests in the area of nutraceuticals. The major research topic deals with the isolation and structural determination of secondary bioactive metabolites (phytochemicals) from underexploited food plants. Also she is interested in the antioxidant compounds chemistry. She is expert of modern chromatographic and spectroscopoic techniques (NMR, UV, IR, ESI-MS, GCMS, and FAB-MS). The results of her studies have been published in the most important food chemistry journals and have been discussed in national and international conferences as oral communications and posters.
