Ioannis Zabetakis has studied for his B.S. degree in chemistry at the University of Athens, and then he spent 8 years in UK where he studied for a Ph.D. degree in food science at the University of Leeds, did Postdoc Research on alkaloids at the University of Durham, and worked as a lecturer in food chemistry at the University of Leeds. During his lectureship in Leeds (1998-2001), he also studied for an M.E. degree in food chemistry. Since 2003, he is working at the Laboratory of Food Chemistry at the University of Athens (2003-2008 lecturer of food chemistry, 2008-2012 Tenure Track Assistant Professor of food chemistry, and since 2012 as a Tenured Assistant Professor of food chemistry). His research interests are in the 3 following areas biosynthesis of flavor and color compounds, food safety and quality, and nutritional value of Mediterranean foods, with emphasis on fish and edible oils. He is also involved in consulting and auditing (as a lead auditor) food industries.
