Dr. Olga Gortzi graduated BSc in Chemistry on 1994. MSc on 1999 and PhD on 2002. She is an assistant professor at Department of Food Technology of TEI of Larissa. She has extensive experience in isolation of compounds from natural products and successful encapsulation of them in liposomal dispersions. She has also experience on the study of the effect of method of preparation and lipid composition on the effective encapsulation of bioactive compounds (vitamins, antioxidants, sweeteners) in mixed carriers (cyclodextrins - liposomes) for the enhancement of their bioavailability. Finally, Dr. Gortzi has experience on physicochemical characterization of liposome preparations and revaluation of the bioactivity of encapsulated substances in model systems. She has participated in 26 research and education programs, 30 publications in international scientific journals, 27 work presentations in National and International Conferences and more than 320 citations. She was also a supervisor of five MSc thesis and four PhD theses and a reviewer in 8 international scientific journals.
