The Effects of Fractions from Shiitake Mushroom on Composition and Cariogenicity of Dental Plaque Microcosms in an In Vitro Caries Model

Summary of the mineral loss data (IML—integrated mineral loss, and LD—lesion depth) from the dentin specimens ( per treatment or control) that were used as substrata for biofilm growth in CDFF for 8 days; amount of protein (protein) and amount of main acid anions (acetate, lactate, propionate, and succinate) in the resting state (Resting) and after 30 min incubation with 1% glucose (Fermenting) of the microcosm biofilms ( per treatment or control).
