Proteases from Canavalia ensiformis: Active and Thermostable Enzymes with Potential of Application in Biotechnology

Effects of Triton X-100 (a) and β-mercaptoethanol (b) on the peptidase activity of C. ensiformis extracts. Extracts (10 g of protein) were preincubated with agents at the indicated concentration, for 15 min at room temperature. Values are the residual activity of extracts as a percentage of the activity on L-TAME without additives and represent the average of 3 separate experiments carried out in duplicate. The percentage of inhibition was calculated considering the protease activity in the absence of agents as 100%. Each assay was performed in triplicate and the results were expressed as the mean value ± SD.
