Metabolic activity in interproximal plaque. (a) In 10% saliva the plaque was anaerobic below a depth of 200 μm. (b) The addition of 10% sucrose reduced the pH from neutral to 4.2 within the dental plaque biofilm. NaF increased the pH by approximately 1 unit suggesting that acid fermentation had been inhibited. (c) N2O production in the biofilm demonstrated that the interproximal plaque was denitrifying. Addition of sucrose stimulated denitrification while F suppressed it.
