Cevdet Demir is a Professor of analytical chemistry at the Faculty of Science, Uludag University, Bursa, Turkey. He received his B.S. degree in chemistry from Hacettepe University, Ankara, Turkey. In 1997, he received his Ph.D. degree in chemistry from Bristol University, UK, in the field of chromatography and chemometrics. His recent scientific interests are determination of phenolic compounds in foods and plants, and development of multivariate calibration methods for determination of antioxidant activity of phenolic compounds in plants. He has been focusing on development of novel enzymatic methods for determination of total phenol contents in plants and foods and developing new antioxidant activity measurement methods like CHROMAC antioxidant activity assay. Determination of phenolic acids, flavonoids, and anthocyanins in plants and foods has been carried out by HPLC and LC-MS. Isolation of individual phenolic compounds and their growth-inhibiting effects on human breast cancer cells has been investigated. Dr. Demir has over 50 publications, and he is in Editorial Board Member of the Journal of Analytical Methods in Chemistry.
