Assay conditions: 0.05 M glycine-HCl buffer from 2.0 to 3.0, McIlvaine buffer from 3.0 to 8.0, and 0.05 M glycine-NaOH from 8.0 to 10. Lipase activity assays were carried out at 37°C (a) and in McIlvaine buffer pH 3.5, at 37°C (b).
