Frequency sweep of 40% , 60% , and 80% O/W emulsions. A plateau or rubbery behavior zone is not present at concentrations lower than 60% and is enhanced beyond the threshold. This is indicative of the difference in the “liquid-like” nature of low-concentration emulsions as opposed to the “solid-like” nature of highly concentrated systems.
