Polysaccharides are the core part of molecules known as carbohydrates, which are polymers found abundantly in nature as structural building blocks. Polysaccharides have attracted great attention in recent decades due to their unique physicochemical and biological characteristics, which make them ideal candidates for a wide range of science and engineering applications. A recent trend in the study of polysaccharides is the utilization of their colloidal particle form, specifically as spherical or fibril-like shape. Polysaccharide-based materials therefore have excellent biocompatibility, renewability, and nontoxicity, which makes them suitable for applications in many industrial areas, including health, environment, food, energy, and others.

In spite of the favorable features of polysaccharide-based materials, challenges are still encountered when producing starting particles via top-down or bottom-up approaches, especially when precisely controlling their surface chemistry and assembly. Another challenge is in developing synergistic combinations of different polysaccharides to create multimaterials or hybrid composites, an area that has not yet been greatly explored. Recent advancements in the applications of polysaccharide-based materials demand further efforts to develop multifunctionalities to allow for an advanced range of polysaccharide-based materials to fit every need.

This Special Issue is intended to cover all aspects of polysaccharide-based materials, including both experimental and theoretical studies. The current and future potential industrial use of chemical derivatives of polysaccharides, such as cellulose, starch, chitin, and chitosan, are also covered. Original research on polysaccharide-based materials which focuses on applications in areas such as food, medicine, active paper and packaging, structural colored film, liquid crystals, 3D printing, and tissue engineering is encouraged. Review articles describing the state of the art in related topics involving polysaccharide-based materials are also welcome.
