Quality of Cucumbers Commercially Fermented in Calcium Chloride Brine without Sodium Salts

<div>Mesocarp chroma for cucumbers brined in CaCl<sub>2</sub> and cucumbers brined in NaCl at the various stages in processing. Chroma is measured radially from the pole and indicates the intensity of the color.
