1. Introduction

2. Categories of Edible Polymer

The edible polymers fall under any of four categories:

(1) Hydrocolloids; (2) polypeptides; (3) lipids; (4) synthetic and composite edible polymer

2.1. Hydrocolloids

Hydrocolloids are often called hydrophilic polymers, of vegetable, animal, microbial, or synthetic origin, that generally contain many hydroxyl groups (polysaccharides) and may be polyelectrolytes as per Scheme 1.
