Changes of pH in β-Lactoglobulin and β-Casein Solutions during High Pressure Treatment

Pressure-induced changes in the visible absorption spectra of bromothymol blue in an aqueous solution of B (1.00 mg/mL) at acidic (pH 3.0) and basic (pH 10.0) conditions compared to the partially transformed form at pH 7.0. Pressure level in MPa is given by the legend. The abrupt decrease in absorbance at 650 nm is due to the deuterium lamp in the spectrophotometer.
