Ice recrystallization inhibition by antifreeze proteins. Flash frozen samples are held at −6°C for 60 minutes. Following this wait, ice crystal size at both time points are compared. Top figures show large recrystallized ice using a control solution, consisting of 50 mM Tris (pH 8.0) and 50 mM NaCl.
