Effect of oil concentration on the soybean oil hydrolysis reaction catalyzed by lipase TL 100L. The reactions were conducted with 2.3% (v/v) lipase, with different concentrations of soybean oil, in 10 mM phosphate buffer, pH 8.0, 5C, or 6C, for 24 hours.
