Figure 11: Effects of variable concentrations of chitosan on fermentation of the strain C. albicans ATCC 10231. The incubation medium was 10 mM MES-TEA, pH 6.0, and 20 mM glucose in a final volume of 1.0 mL to which 12.5 mg of fasted cells (wet weight) was added. After incubation at 30°C in a water bath for 10 min, the cells were cooled in ice water and centrifuged. Ethanol was measured in aliquots of the supernatants as described under experimental procedures.
