Antioxidant activity in extracts from green and fully ripe tomato fruits and pomace from industrial tomato processing. Values are presented as mean ± S.E.M  (𝑛=3) which with different letters are significantly different at 𝑃<0.05. DPPH free radical scavenging activity was calculated as percentage of DPPH discoloration in 1000 μg/mL of dried extract, catechin (1.8±1.2 µg/mL), and quercetin (1.2±1.2 µg/mL) showed a discoloration of 50%. Trolox (150 µg/mL) presents 244±1.2 µmol Fe⁺²/g. PE seeds: petroleum ether extract of seeds.
