Effects of Additive β-Cyclodextrin on the Performances of Green Tea Infusion

Chromatism of tea infusion during storage. (a) Conventional extraction. (b) Extraction with β-CD. Tea infusion extracted with or without β-CD was stored at 4°C for 20 days. The samples were analyzed for lightness (L), redness (+a), greenness (−a), yellowness (+b), and blueness (−b). Measurements were conducted on a total of 5 samples for each treatment.
