Avns are low molecular weight phenolic compounds consisting of an anthranilic acid linked to a hydroxycinnamic acid with an amide bond. Different forms of Avns have been either extracted from oats, produced by chemical synthesis, or generated by recombinant DNA techniques in yeast cells.
