Aggregation kinetics of stefin B monitored by ThT binding/fluorescence in the absence and presence of different concentrations of vitamin C (vit C). ThT fluorescence emission at 482 nm was monitored upon excitation at 440 nm. Protein concentration was 34 μM, and a concentration of vit C was varied. Each sample was incubated at room temperature in 0.015 M acetate buffer, 0.15 M NaCl at pH 4.8, prior to mixing with the ThT probe as described in Section 2.
