Chemical structure of chitin/chitosan. The index represents the number of repeat units of glucosamine in the chain and the number of repeat units of acetyl-glucosamine in the chain ( indicating the degree of polymerization and being the degree of acetylation). When is more than 50%, the polymer is called chitosan. Content of NH2 increases its reactivity [16, 25].
