Mean concentration of GSH remaining (sum of GSH and GSSG) after completion of alcoholic fermentation (n = 3) following fermentation by AWRI 1688 or AWRI 2861 yeast strains. Fermentation was initiated in a medium containing three initial yeast assimilable nitrogen concentrations (155, 320, and 430 mg/L) and four GSH concentrations (0, 20, 100, and 250 mg/L (0, 0.0651, 0.325, 0.814 mM)).
