Total mean hydrogen sulfide (H2S) production during fermentation (n = 3) with AWRI 1688 or AWRI 2861 yeast strain relative to initial nitrogen concentration. Fermentations were initiated in media containing three initial assimilable nitrogen concentrations (155, 320, and 430 mg/L) and four glutathione (GSH) concentrations (0, 20, 100, and 250 mg/L (0, 0.0651, 0.325, 0.814 M)). Error bars show the standard deviation of the replicates.
