Mean concentration of hydrogen sulfide (H2S) and methyl thioacetate (MeSAc) produced by yeast strains AWRI 1688 and AWRI 2861 during fermentation (n = 3) under different YAN and GSH conditions. Fermentations were initiated in media containing three initial assimilable nitrogen concentrations (155, 320, and 430 mg/L) and four GSH concentrations (0, 20, 100, and 250 mg/L (0, 0.0651, 0.325, 0.814 mM)).
