(d) Chemical structures of saffron compounds. (e) Pharmacological effects of saffron. Saffron was first documented in (a) “Collected Essentials of Species of Materia Medica” in China. (d) The chemical structure of saffron extract from top to bottom is crocetin, safranal, and crocin. Many studies have demonstrated that saffron compounds can protect the cardiovascular system by modulating oxidative stress and improving drug-induced cardiotoxicity. Furthermore, they have been known to have antiatherosclerosis, antimyocardial ischemia, anti-ischemia reperfusion injury, and several other effects.
