High Pressure Processing Treatment of Fresh-Cut Carrots: Effect of Presoaking in Calcium Salts on Quality Parameters

Effects of HP treatment (600 MPa, 10 min) after different presoaking: control : distilled water, 1% calcium chloride, 1% calcium lactate, and 1% calcium gluconate on relative hardness of fresh-cut carrots after storage at 4°C for up to 9 days. Results are expressed as mean ± the standard deviation. Different letters mean significant difference among the groups for the same day.
