Quality of Cucumbers Commercially Fermented in Calcium Chloride Brine without Sodium Salts

Bloater indices for fermented cucumbers by brining process and purging procedure. The minimal purging routine of 2 h, 2 times a day was only used in CaCl2 brines. The 8 h, 2 times per day (2 × day) treatment was used by processor 1 and the 20 h, 1 time per day (1 × day) treatment was used by the remaining processors.
