Quality of Cucumbers Commercially Fermented in Calcium Chloride Brine without Sodium Salts

Fermented cucumbers representative of the average color of each fermentation process. The average hue value for the cucumbers in the CaCl2 fermentation process was significantly higher than the average hue of the cucumbers in the NaCl fermentation process . The chroma values were also significantly different , but the values were not significantly different from each other .
