Kozo Nakamura obtained a Ph.D. degree from the Department of Chemical Engineering, Graduate School of Engineering, Hiroshima University, Higashihiroshima, Hiroshima (November 14th, 1996). He serves as an Associate Professor at the Faculty of Agriculture, Shinshu University. His studies are among food molecules, conducted to elucidate the food function. He is also interested specially in the analyses of functional ingredients and functionality assessment of food made from agricultural products.
