Ivonne Delgadillo studied chemistry at the Universidad Nacional de Colombia in Bogotá finishing her studies in 1977. She obtained in 1985 her Ph.D. degree in biochemistry at the Johannes Gutenberg Universitaet zu Mainz in Germany. She is an Associated Professor (with Habilitation) at the Department of Chemistry of the University of Aveiro, Portugal, where she is responsible for the Food Biochemistry Group. Her scientific interests are focused on isolation and characterization of food components: polysaccharides and proteins/enzymes; development of applications of instrumental techniques (spectroscopy namely mid and near Infrared, and NMR, electronic detection of aroma, GC-MS, GC x GC-MS, MS-MS) for the study of complex systems and food products; and development of instrumental methods for quality control, assessment of quality (quality control and authenticity determination), and monitoring of changes produced by processing.
